Simple Balsamic Vinaigrette

Instead of purchasing a pre-made salad dressing, we whip up a simple Balsamic Vinaigrette consisting of:

  • Splash of Balsamic Vinegar
  • Larger splash of Extra Virgin Olive Oil
  • A dollop of Dijon Mustard
  • A pinch of Pecorino Romano cheese (sheeps milk, not cow milk)

Whisk it up and pour immediately over a salad.

Garlic Scape Pesto

We have received a couple of bunches of bunches of Garlic Scapes from our CSA, and this seems to be the most popular thing to do with them. We boiled some of the new Barilla Plus pasta, added this and some cherry tomatoes also from the CSA.

Garlic scape pesto

1 pound garlic scapes
1 cup grated parmesan cheese (I used Percorino Romano)
Olive oil (about 1/2 to 1 cup)
Pine nuts if available
