Unfortunately we still had one chicken from the previous pickup so I threw these into the freezer and pulled the older one out. Let it defrost for a day or so in the fridge and finished it in slowly running water in the sink. Since it was extremely hot outside and the air conditioning inside was running continuously I whipped up a quick olive oil, oregano, parsley and garlic liquid rub, half-filled a can with coca cola and some more oregano and stood the chicken on it. I placed the chicken on the grill at about 350 degrees Fahrenheit and cooked for almost two hours. Beer can chicken with coke turned out to be rather tasty. The skin crisped nicely and the meat was tender. After dinner I pulled all the leftover meat from the carcass and placed the bones and some of the fats and skin into the freezer to be turned into broth before the week is over.
